I grew up in Georgia and football is such a big part of life there. Over the years I can’t even count how many college football games I have seen. One of the most important things for the games is to have the best food for you and your guests. Game-Day Eats gives you the recipes to have an incredible spread of food for everyone. 

I first saw Eddie Jackson on Food Network Star and was really excited to see he wrote a cookbook. The recipes are great and I can’t wait to try more.

Chorizo con Queso Dip

One of my favorite things to order when I go out to eat is queso dip. I have only made homemade queso dip a few times and never with chorizo, so this was a first for me. The ingredients were all readily available at the grocery store. 

To make the dip you just need a cast iron skillet. The directions are super simple and easy to follow. I loved how quickly it came together plus the dip stayed hot for a while after I cooked it. 

The Chorizo con Queso dip was delicious – it had a little spice but not too much and was the perfect consistency to coat the chips. This is a great recipe to make for a crowd, just make sure you get some right away before the crowd devours it.

Mac and Cheese Cups

Who doesn’t love mac and cheese? It isn’t the easiest dish to serve at a party but this recipe solves that problem! 

All of the ingredients for the recipe were easy to locate. The wonton wrappers in my grocery store are in the refrigerated section of the produce section. I have worked with wonton wrappers once before and they aren’t difficult to use. For this recipe remember that you want to push the wrapper as far into the tin as possible so they will come out flat. A few of my cups wouldn’t stand up at all. Plus I did have a few wrappers rip as I was putting them in the tin but I had plenty of extras. 

The recipe was simple to follow and it cooked really fast. If you are going to have a lot of kids eating this dish you may want to cut the Tabasco in half in the recipe. I liked the spiciness of it but kids may not. 

The mac and cheese cups were delicious, the crunch of the wonton wrapper with the gooeyness of the cheese is the perfect combination. I will definitely make these again. Plus I had so much mac and cheese left that I put it in the fridge for the next day’s lunch.
