Grilled Chicken Bruschetta

Chicken is something that I cook a lot of in my house. I find that I am always searching for a new recipe or technique to try to keep my meals interesting. Years ago I stumbled across a Cooking Light recipe for grilled chicken bruschetta. Since then I have made it many times and adapted it to what I love. 

When I serve this chicken bruschetta I almost always make parmesan couscous (from the box mix – so easy). I love to put some of the bruschetta mixture on top of the couscous. 

This recipe easily serves four people and if your tomatoes are giant, as mine where this past week, you can adjust how many you need for the recipe. Below you will find the recipe using an oven safe grill pan and in the notes oven directions too in case you prefer to use the oven. I have cooked it both ways and it always comes out juicy and tasty.

Grilled Chicken Bruschetta

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/2 cup Italian dressing or Sun-dried Tomato dressing
  • 2 tomatoes, chopped
  • 1/4 cup fresh basil, chopped or 1 tsp dried basil
  • 1 tsp olive oil for the pan
  • 1/2 cup shredded mozzarella cheese

Instructions
 

  • Preheat oven to 350º.
  • Place chicken in plastic bag and add 1/4 cup of the dressing. Seal the bag and marinate the chicken in the fridge for 10 minutes.
  • Combine the remaining 1/4 cup of the dressing, tomatoes, cheese and basil.
  • Heat up an oven safe grill pan on high heat. Add oil to the pan.
  • Remove the chicken from the bag and discard bag.
  • Add the chicken and cook for one minute on each side to get the grill marks.
  • Take the oven safe grill pan and put it in the oven. Cook for 10 minutes.
  • Turn the chicken over. Add some of the tomato mixture on top. Cook an additional 8 to 10 minutes or until the internal temperature of your chicken reaches 165º.
  • Serve each piece of chicken with additional tomato mixture.

Notes

Sun-dried Tomato dressing can be really hard to find so if you can't find it use some Italian dressing as it works just as well. If you don't have an oven safe grill pan you can also bake this recipe by following the steps below. 
  1. Preheat oven to 350º.
  2. Once chicken is marinated, place it on a baking sheet lined with aluminum foil and bake for 15 minutes. 
  3. Turn the chicken over and top with some of the tomato mixture. Bake an additional 10 to 20 minutes (depending on the thickness of your chicken breast) until the chicken reaches 165º.
  4. Serve each piece of chicken with additional tomato mixture.
