“I created this cookbook to help people who want to eat more plants for the health benefits but don’t want to drastically change their habits or eat boring food all week long,” Bailey Rhatigan. 

More plants on your plate offers a wide variety of recipes that can be adapted to vegan and vegetarian lifestyles. A lot of the recipes come with great tips to help you if you want to meal prep. As someone who has done a lot of meal prepping in the past, I am always looking for tips and recipes to make the process easier. 

It was really tough to decide what I wanted to make as so many of the recipes were speaking to me. The recipes I chose were delicious and had the right amount of spice for me.

Parsnip Fries

Last year I tried parsnips for the first time and I loved them. When I saw this recipe for the fries I knew I wanted to try them right away. Parsnips are easy to find at most grocery stores, I have seen them sold individually or in a bag similar to how carrots come. They never seem to be in the same place in the produce section so make sure you look all around if you can’t find them. 

The recipe was very simple to make. I love all of the spices used but remember if you are serving these to kids they may be a little too spicy for them. My fries didn’t come out very crispy and some of the ends of the fries burnt a little, so I didn’t want to cook them too long. I am going to try them again sometime as I love to eat all types of fries.

Zucchini Parm Boats

I struggle with figuring out what to have for lunch and am always searching for new things. This recipe is the perfect lunch. I had everything in the house to make these except the zucchini so they were easy to do. 

They were delicious and really filling. I did find the red pepper flakes made them a little spicy but I liked that about them. These will be a lunch staple for me for now on. Plus I think you could cut these smaller when they come out of the oven and serve them as an appetizer to a larger group.

Overall I am really happy with the more plants on your plate cookbook. The recipes are easy to follow and the dishes are delicious. I can’t wait to incorporate even more of these recipes into my weekly meals and even my meal prep. What recipes have you tried from more plants on your plate?
