My Favorite Birthday Cake

Today is my birthday and I always want to have a cookie cake. I have been known to drive over an hour to get one of the cakes from Great American Cookies, they are the best in my opinion. I know there are other places that sell them but they just don’t taste the same.

My birthday last year wasn’t much of a celebration, even though I was living close to my friends for the first time in ten years we couldn’t get together with all of the stay at home orders.  Since the malls were closed so was the cookie store, which meant no cookie cake. 

As long as I can remember I have had cookie cakes, I think it started when I was in middle school. My Mom even used to mail me one in college, they didn’t always arrive in one piece but they were still enjoyable. Not everyone in my family loves cookie cake so it wasn’t odd for there to be a second vanilla or yellow cake at the celebration, as you can see from the picture below.

Copycat Cookie Cake Recipe

I love to bake and wanted to make my own copycat cookie cake but haven’t succeeded yet. Finding a recipe to replicate the cookie cake from Great American Cookies hasn’t been easy. This recipe is the best I have found for the actual cake and it’s pretty close.  The vanilla frosting is easy to copy but even with all of my years of searching I have never been able to duplicate the chocolate frosting, which is a shame as it is one of the best frostings I have ever eaten. 

Sometimes I wonder if I will continue to be able to get a cookie cake as it seems there are less and less Great American Cookies open each year. I still have hope that in the next few years I will figure out the recipe for the chocolate frosting and be able to make my own. Don’t worry if I figure it out I will definitely share the recipes!
