I have owned Cooking Light Fresh Food Fast Weeknight Meals: Over 280 Incredible Supper Solutions for years and have loved every recipe that I have made from it. Even though it is an older cookbook the recipes still hold up today.
I love the variety in the recipes with the great shortcuts that help me save time when I need a quick meal. Before the fire I had marked about twenty more recipes I wanted to try so I will be picking up another copy of this cookbook soon to help me in my search for healthier meals.
I love a good lobster roll and these shrimp rolls offered something I haven’t tried before. For this recipe I split all of the ingredients into two different bowls as my sister doesn’t eat mayonnaise. The recipe is very simple to make and since we keep frozen cooked shrimp in the freezer most of the time we had almost all of the ingredients on hand.
It was delicious and my sister enjoyed hers too, although next time I think I may try to use some plain Greek yogurt as a substitution for the mayonnaise to see how it comes out. These are great for a light dinner or a perfect lunch and I can’t wait to have them again.
Normally I would have made multiple recipes from this cookbook, however, it was destroyed during the fire. I have over the years made many recipes from it and loved them all – I just don’t have any photos of them to share.
