“My goal is to share the ways I’ve learned to cook faster, fresher meals that still feel special. I hope to take some of the mystery and stress away from healthy eating,” Erin Clarke.
A friend of mine sent me The Well Plated Cookbook and I immediately wanted to cook so many of the recipes from it. The recipes are fast and healthy recipes that will fill you up.
Autumn Sheet Pan Sausages with Apples and Harvest Vegetables
I love sheet pan suppers – they are easy to make and even easier to cleanup. This recipe includes brussels sprouts which I have only had once so I was happy to try them again. The dressing for the vegetables and sausage has Dijon mustard in it but surprisingly it wasn’t overpowering in any way. I do think I cut some of the apples a little too small and will leave them bigger next time I make the dish as some got really mushy.
Overall this was a really good meal and I will definitely make it again. Even my sister (who isn’t a big fan of sausage) loved it!
Stuffed Sweet Potatoes: Barbecue Chicken
Who doesn’t love sweet potatoes? I love to eat them whole with cinnamon, brown sugar and butter or eat roasted chunks, but I’ve never thought of stuffing them. The barbecue sauce and spice mixture with the chicken on the sweet potato is so good. I can’t wait to try all the other versions that are in the cookbook.
I love that this is great for lunch or dinner. I’m not sure about you but finding things to make for lunch is always a struggle.
The Well Plated Cookbook is a fantastic cookbook. I am going to be cooking out of it on a regular basis for a while. Both my sister and I found so many different recipes to try. This cookbook would be great for any home chef with easy to find ingredients and easy to follow directions.
