“I still eat everything I want to; I’m just careful about how much I eat and when I eat,” Bobby Flay.

When first reading through this cookbook I marked so many recipes that I want to try  – making it almost impossible to narrow it down to two to try for my review. The recipes I tried are tasty and healthy. The ingredients are easy to find and the directions are pretty clear.

It is great to have a cookbook that offers healthy meals that are truly delicious as we have all tried some healthy recipes that are terrible. I liked that the nutritional information is listed as well.

Roasted Broccoli with Roasted Lemon and Parmesan

Over the last few years I have fallen in love with roasted broccoli. I was really excited to try this version. The recipe was very simple to follow and I really enjoyed eating it. One thing I would note is to make sure your lemons are cut side up on the pan or  you will find that all of the juice is gone from them when you pull the pan out of the oven. The recipe had just the right amount of spice. I have made this recipe a few times now and still love it. Goes great with a marinated chicken breast or a pan fried pork chop.

Slow Roasted Cod with Avocado Salsa Verde and Pomegranate

I love to eat fish but don’t cook it a lot at home as it’s hard to get the fish smell out of an apartment. This recipe stood out to me because of the avocado salsa and I had never had pomegranate so I thought that would be nice to try. 

The avocado salsa was really good, however, the recipe doesn’t say what size avocado to use and I think mine was a little smaller than it should have been. If I had another avocado in the house I would have added it to the salsa. Cooking fish in the oven is really simple and it came out so good. 

Overall I liked everything with the dish except the pomegranate seeds, but I think that just had to do more with the texture of the pomegranate for me. I would definitely make it again and just leave the pomegranate off.

Bobby Flay Fit is a great book to get if you want a tasty healthy meal. So often with healthier versions of recipes the flavor isn’t very good – however, with these the flavor is fantastic.
