I have wanted to try out this cookbook for a while, I love to bake but sometimes I don’t have time to make a complicated recipe. The recipes in Weeknight Baking: Recipes to Fit Your Schedule offer simple tips and tricks to make delicious recipes any day of the week. In the cookbook you will find recipes for cakes, frostings, cookies, brownies, tarts, pies, muffins and so much more. If you have a craving for something sweet I bet this cookbook has a recipe for it.

Snickerdoodles

If you have been reading my blog you know I love snickerdoodles. Having made them so many times in my life I find that they are a great recipe to test. Since I am so familiar it is easy to recognize if something has gone wrong. 

The recipe was very easy to follow and the snickerdoodles looked really good once they were cooked. They were a little dry when I ate them the first day but were perfect the day after. Make sure to watch your oven as mine cooked a little faster than I was expecting so I had to pull one of the batches out sooner than expected. I would try these again, but I have to say they aren’t my favorite snickerdoodle recipe that I ever made. My favorite is still my Nana’s recipe

Lime Curd Bars

Key lime pie is one of my favorite desserts and I love to try different types of lime desserts. The bars were really easy to make. I chose to make them all in one day as it was quick to make the curd while the crust was baking. Make sure you get plenty of limes as it took nine to get the 1/2 cup of lime juice.  Letting the lime curd bars chill in the fridge was the hardest part of the recipe!

These were so tasty and tart. I loved them and so did my family. A little cool whip would make them the perfect dessert. If you like any type of lime dessert you must try these asap!

Overall I enjoyed Weeknight Baking: Recipes to Fit Your Schedule and can’t wait to try some of the pie recipes. The tips and tricks offered in the cookbook are great for novice and experienced home cooks. It is a great addition to your cookbook shelf for when those cravings hit.
